Ingredients

  • 2 cups whole wheat flour
  • ½ cup all-purpose flour
  • ⅔ cup warm water (or milk)
  • 1 tablespoon instant dry yeast
  • 1 teaspoon salt
  • 1 egg yolk
  • 2 tablespoons water
  • 1 tablespoon butter
  • Sesame seeds and nigella seeds for garnish

Instructions

  1. Activate the Yeast: In a small bowl, dissolve the yeast in warm water (or milk) and let it sit for 5 minutes.

  2. Prepare the Flour Mixture: In a large mixing bowl, combine the whole wheat flour, all-purpose flour, and salt. Mix thoroughly.

  3. Combine and Knead: Add the yeast mixture to the flour and begin kneading the dough. If the dough feels too stiff, gradually add a bit more warm water. Knead for approximately 10 minutes until the dough is smooth.

  4. First Rise: Cover the bowl with a kitchen towel and let the dough rest for about 1 hour, allowing it to rise.

  5. Preheat the Oven: After 1 hour, preheat your oven to 450°F (~230°C).

  6. Prepare the Glaze: In a small bowl, whisk together the egg yolk, melted butter, and 2 tablespoons of water.

  7. Shape the Dough: Transfer the dough to a well-floured surface. Gently press it with your fingers into a circular shape, about ½ inch thick. Cover and let it rise for another 10 minutes.

  8. Apply the Glaze and Decorate: Spread the glaze evenly over the dough. Use your fingertips to create the traditional square patterns on the surface. Sprinkle with sesame and nigella seeds.

  9. Bake: Carefully transfer the dough to a floured baking sheet. Bake in the preheated oven for about 20 minutes, or until golden brown.

  10. Cool and Serve: Remove the bread from the oven and loosely cover it with a kitchen towel. Let it rest for 10 minutes before slicing.
