Ingredients:
- 1 cup red lentils
- ½ cup fine bulgur
- ¾ cup olive oil
- 1 medium onion, finely chopped
- Green onions, parsley, mint, and any other preferred greens, chopped
- 1 tablespoon pepper paste
- 1 tablespoon tomato paste
- Cumin, red pepper flakes, and salt, to taste
- Lemon juice, to taste
- Romaine lettuce leaves, for serving
Directions:
- Prepare the Lentils: Wash and drain the red lentils. In a small saucepan, combine them with 2 cups of water. Bring to a boil, then reduce the heat and let simmer uncovered for about 10 minutes, stirring occasionally.
- Add Bulgur: Stir in the fine bulgur, mix well, then remove from heat. Cover the saucepan and let it sit for about 10 minutes, allowing the bulgur to expand and soften.
- Sauté the Onion: In another saucepan, heat the olive oil over medium heat. Add the finely chopped onion and sauté for a couple of minutes. Then, add the pepper and tomato pastes, stirring well. Remove from heat once combined.
- Combine Mixtures: Add the sautéed onion and paste mixture to the lentils and bulgur. Season with salt, cumin, red pepper flakes, and lemon juice. Start by stirring with a spoon, then mix thoroughly with your hands.
- Add Greens: Gently fold in the chopped greens.
- Form the Balls: Wet your hands slightly and shape the mixture into small oval lentil balls.
- Serve: Arrange the lentil balls on a serving plate over the romaine lettuce leaves. Feel free to drizzle with extra lemon juice and sprinkle with hot pepper flakes if desired.
