Ingredients:

  • 1 ½ lb ground chicken
  • 1/2 cup creamy peanut butter
  • 1/4 cup low sodium soy sauce
  • 1/4 cup warm water
  • 1 tbsp dark brown sugar
  • 1 tbsp toasted sesame oil
  • 1 tbsp sriracha sauce
  • 1 tbsp rice vinegar
  • 1 tbsp lime juice
  • 3 tbsp olive oil (for cooking)
  • Optional: Crushed peanuts for garnish

Instructions:

  1. Prepare the Sauce: In a mixing bowl, whisk together the peanut butter, soy sauce, warm water, dark brown sugar, sesame oil, sriracha sauce, rice vinegar, and lime juice until smooth and well combined.

  2. Marinate the Chicken: Add the ground chicken to the bowl with the prepared sauce and toss to coat evenly. Let it marinate for a few minutes.

  3. Cook the Chicken: Heat olive oil in a medium-sized skillet over high heat. Add the marinated chicken and stir continuously, cooking until the chicken is browned and fully cooked through (about 8-10 minutes).

  4. Serve: Optionally, sprinkle crushed peanuts over the cooked chicken before serving for added crunch.
