Looking for a healthy, gluten-free breakfast option? Try this savory lentil bread recipe! With a cake-like texture and packed with protein, it’s a delicious alternative to traditional bread.

Ingredients:

  • 1 cup red or yellow lentils, soaked overnight
  • ½ cup yogurt or kefir
  • ½ cup olive oil
  • 1 cup of your favorite cheese, crumbled or grated
  • 2 eggs
  • 2 teaspoons baking powder
  • ½ bunch fresh dill, chopped
  • ¼ teaspoon salt
  • 1 teaspoon sesame seeds
  • 1 teaspoon black cumin seeds (nigella seeds)

Instructions:

  1. Prepare the Lentils: After soaking overnight, drain the lentils well. Blend them in a food processor until smooth.

  2. Combine Ingredients: In a large mixing bowl, combine the blended lentils, yogurt (or kefir), olive oil, cheese, eggs, baking powder, dill, and salt. Mix until all ingredients are well combined.

  3. Bake: Pour the mixture into an oiled baking dish, spreading it evenly. Sprinkle the sesame and black cumin seeds over the top.

  4. Bake and Serve: Bake at 375°F (190°C) for 30 minutes or until golden brown. Allow it to cool slightly before slicing.

For an extra burst of flavor, try spreading some muhammara on top of your lentil bread. Enjoy!
